N2 - T Gas sensors are a key component in developing an electronic nose (e-nose) for coffee volatile compounds (aroma) applications. This study aims to optimize the use of sensors in e-nose based on three evaluation indicators: sensitivity, selectivity, and sensor correlation. The research was conducted experimentally using nine types of MQ Series sensors with coffee grown near Malang, specifically Robusta-Gedangan, Robusta-Tirtoyudo, Arabica-Semeru, and Arabica-Gunung Kawi Gayo coffee varieties roasted and ground to medium consistency by Alir.co Coffee and Roastery.
